Replaced graphing engine

• The analytics graphs were fairly basic. I originally aimed to make them functional enough to get Yellowball started. However, after using them more for my own podcast, I realized their limitations. As a result, I switched from Frappe Charts to Apache ECharts, which provides better performance and supports a wider range of chart types. While things are mostly the same for now, the new engine will let me add more chart options in the future.
